My Nephew: the Baker, Chef, and Architect

This is what Josh wants to be when he grows up.  And why not?  I for one resent the fact that I no longer possess true childhood innocence, wonder, and hope.  Why won’t Santa come down the chimney for me?  Perhaps it’s bc I don’t believe.

Don’t let this video fool you bc he’s really not that shy!  This cool kid will talk to you about different flavors, textures, combinations, and techniques until even the most jaded and cynical of adults will realize that they’re soon shaking their heads in agreement and anticipation to sink their teeth into the delectable creation that Josh is gushing about too!!

Even if you don’t choose to whip up these fun and colorful cakes, I do urge you to get your kid (or a kid you love) into the kitchen and get both your hands dirty!  As you’re pressing your fingers into a dough or stirring a pot of yummies, you’ll find that the tangible aspect of creating and preparing goodies will quickly manifest into a moment of sharing and bonding.  This is priceless!!!!  No amount of Lego Playsets, Xbox Bundles, or Barbie Dream Houses can compare to this lasting memory ya’ll are creating together.  Also, it seems that when kids take ownership of what they’re creating, they’re more likely to eat it, and appreciate it since they’ve learned about how it came to be!  What a great way to instill positive self esteem!!!

And so even if you skimmed the last 3 paragraphs as a bunch of blah blah blah, take into consideration how freaking EASY these are!  If you’ve got 20 minutes, food coloring + basic ingredients, and a kid who wants to hang out with you ….TADA!  You’ve got yourself some Funky, Rainbow, Marshmallow Cupcakes — yell this into a room full of kids —I DARE YA!  and see what unravels….

For the White Cake:
Cream together 1 1/4 c Sugar and 1/2 c of softened, room temp., unsalted Butter
Sloooowly drizzle in 2 beaten Eggs, then add a dash of Vanilla or Almond Extract (about 1 ts)
*Please do not buy or use “clear” or “imitation Vanilla” — this is not Vanilla at all but like the cheap knock off counterpart for “designer imposter” perfumes.  Use a good, quality Vanilla Extract.  I like 100% Pure Tahitian Vanilla Extract by Neilsen Massey if I’m not making my own.
In a separate bowl: sift together 1 1/2 c unbleached, unbromated Flour (with no leavening agents–all purpose works) and 1 3/4 ts Baking Powder (not soda)
Slowly sprinkle in your dry Flour mixture into your creamed Butter mixture, alternating with 1/2 c of Milk (you can also use Soy, Almond, Coconut, Hemp–I personally disliked the taste of Rice in this).
Scoop and bake in a 350 oven for 19-22 minutes =D
